CSA Day. A.k.a. Eff-load of food day.
The problem we're having is that our CSA share is designed for a family of four, and apparently that doesn't include cats. So Sous Chef and I are eating for four, though neither of us has anything other than actual buns in our actual oven.
This is actually a great blessing. As long as we are disciplined about cooking regularly, we've got plenty of fresh produce and we have yet to run out before the week is through and we're ready to pick up another share. But if we go out to eat, even one night, we are inevitably left with extra produce, and our refrigerator looks positively shameful when you think of all the starving people in the world.
Another thing I've noticed: the shares are getting larger. I suppose this is the natural cycle of things; more summer means more time to grow which means more food. Great. Except when you're eating for Four Except Actually Two.
For example: today, Sous Chef brought home - Five ears of corn, an eggplant, a dozen eggs, a loaf of bread, three cucumbers, four tomatoes, four onions, eight potatoes, and a gigantic watermelon with a piggy tail. Seriously, it had a piggy tail:
Give me a minute to think of some clever puns to insert here…
When I saw the watermelon I squealed with delight...That watermelon was pig enough to feed two families…It was really difficult to hooft that thing up a flight of stairs…
Okay, I'm done.
After I finished butchering the watermelon (hey, another pun!), I had four enormous Gladware containers full of watermelon chunks. I needed Pinterest.
A little Pin-spiration later, and I assembled the ingredients for this refreshing summertime beverage.
Coco-Watermelon Rum Fizz
(Serves 2 - 3)
4 cups chilled watermelon chunks
2 cups ginger ale
1/2 cup coconut rum
Blend everything together.
Add more rum if it's one of those days.
Serve over ice.
Yum. Rum yum.
Imbibe well.
P.S. Don't forget to take your tasting straw out of the blender when you're testing your recipe and decide that it needs a bit more watermelon.
Straws and blenders are not friends.
P.P.S. I made these the other day when a couple of friends came over, and I discovered - it's even better with a couple leaves of basil thrown in!
