6 things that make it easy to eat more plants


We've (I will not call this a resolution, I will not call this a resolution) decided to eat more plants.  We're not classifying ourselves as vegan - you know how I hate being boxed in - but we're committing to a healthier lifestyle, and for us, that means that the majority of our food intake will be in the form of plants.

Here are some of the things that make this decision easier to see through:

Foods:


1.  Cashews: We've made several soups using cashew cream (cashews soaked overnight in water, then blended with vegetable broth, water, or another liquid) in place of heavy cream.  I don't miss the heavy cream at all.  And with nearly seven times less saturated fat, plus more fiber and protein, cashews are a much healthier replacement.  In short, cashews are my latest Favorite.

2.  Nutritional yeast: This gives food a nutty and savory flavor, reminiscent of cheese.  We're using it later this week to make a vegan mac and cheese recipe.  It also provides a plant-based hit of Vitamin B12, a necessary nutrient usually only found in animal products.

3.  Mushrooms:  Last week we made a sandwich with hearty shiitake mushrooms, a spicy almond butter spread, and pickled radishes, and once again, I didn't miss the meat at all.  Mushrooms - especially substantial ones like shiitake and portabello - have that spongy and textured feel of meat, minus all the additives, hormones, and antibiotics.

Non-foods:

1.  Planning:  Having lots of plant-based options on hand, ready to go, along with a meal plan for the week, helps curb those spur of the moment impulses.

3.  A partner in crime:  Way easier to stay on track with this plan when the person sitting across from me at the table is eating (and thoroughly enjoying) the very same thing.
