Last night we were supposed to have roast vegetables with goat cheese and macaroni, but my Sous Chef forgot to pillage the garden before he came home from work, so we didn't have the veggies we needed. Luckily, we had everything we would need to make this dish, with a few substitutions (ex. Corno di Toro peppers instead of green chiles, goat cheese instead of Queso Fresco). For the recipe, check out the July 2011 issue of Clean Eating magazine:
The base: sweet potatoes, peppers, and onions. Looks kind of like a delicious Irish flag, doesn't it? |
I love using the broiler to finish things off, even in the middle of the summer heat! |
(Addendum - 08.19.11 - Clean Eating magazine has asked me to remove their recipes from my blog. I apologize for any inconvenience this causes any of you. I try to make sure I post the month and year of the issue where I found the recipes so you can find a copy for yourself. You can order back issues here. Eat well!)
YUMMM!! Sounds Wonderful! I will have to try this one.
ReplyDeleteIt was quite delicious, I must say. The egg gave the whole thing a very creamy quality. I ate my second helping the next day with some hot sauce - made it even better. Thanks for reading!
ReplyDeleteSo many flavors! I'll bet this was awesome. I love finding recipe magazines that I can use over and over again!
ReplyDeleteThis looks delicious! I keep hearing about Clean Eating Magazine...I think it's time to subscribe!
ReplyDeleteIt's a great magazine - I've subscribed to quite a few over the years, and this is my favorite. Food-focused, but with other healthy living tips sprinkled in throughout.
