This has been a hard week for me. I've got some personal stuff going on, plus it's the beginning of the school year (though I have to admit that my classroom is settling in quite quickly!). On Thursday, I came home, hugged the Sous Chef, and said in my most pathetic, exhausted voice:
"I want a snickerdoodle!"
I didn't get my snickerdoodle that night, though - life had other plans. And when I say "life", I mean that The Big Bang Theory and The Office were premiering, and I was so exhausted I didn't have the energy to stay awake for the latter, let alone bake some comfort cookies.
But Friday...
I made sugar cookie dough, thanks to one of those mix-in-a-bag deals that come with the cookie cutter attached with a cute little ribbon. You know the kind - the really brightly colored bag, the matching cookie cutter - you find them in garden centers and Hallmark stores, of all places.
Anyway, that cookie mix was my ticket. All I needed was one egg and one stick of butter. And I happened to have exactly that. No more, no less. It was like it was meant to be.
A few hits of cinnamon later, and I was sitting on my couch with a bowl of "snickerdoodle dough" in my lap. And a Creamsicle cocktail in a glass on the coffee table. I was in heaven. (And before you start to worry, let me inform you that despite being in the throes of comfort-eating, I stopped myself when I got full. I wasn't so mentally checked-out that I went totally overboard. This girl just needed some cookie dough and a cocktail!)
The comforting has continued into today. I saw that I had some leftover Sargento Natural cheese and white bread from my grilled cheese throwdown earlier in the week.
I also had some ground bison, tomato paste, and dried herbs.
Enter the Spaghetti Sauce Sandwich, the slightly less popular yet just as comforting cousin of Spaghetti and Meat Sauce with Lots of Cheese.
I browned the bison, turned my tomato paste into tomato sauce by whisking in some water, and added dried basil, oregano, thyme, garlic powder, and onion powder. And BOOM - spaghetti sauce.
My mom used to make these all the time, using leftover sauce from our weekly spaghetti nights. She prefers her sauce to be cold (which I will admit, makes for a much less messy sandwich), on untoasted bread, but I like my sauce hot and on toast. That way, the cheese gets all melty and gooey and the toast adds a nice crunch.
