Rainbow Bite

I heart rainbows.

Rainbows always seem to have perfect timing.  The last time I saw a rainbow, it was when I was in a deep depression; I hadn't been to the gym in weeks, and I was feeling the effects - puffiness, crankiness, lethargy, and general ickiness.  I broke out of it just enough to get into my gym clothes and force myself into my walking shoes.  When I stepped outside, I saw a rainbow - a fully-arching, all the way across the sky rainbow.  And it was centered...over the gym.  Meant.  To.  Be.

Okay, I'll admit it.  When I was a kid, I wanted to be Rainbow Brite.
I wanted to live in Rainbowland with my teeny tiny friend Twink.  I wanted to ride Starlite the horse around on rainbows that I could shoot out of my super-cool color belt.  And I wanted a cute yellow star on my cheek.  And those totally awesome 80's rainbow boots.  To dye for.

Nowadays, I've discovered that I also love eating rainbows.  You may have heard about "eating the rainbow" on Oprah (remember that show?).  This means, roughly, incorporating many differently-hued fruits and vegetables into your diet.  The thinking is, different colors mean different vitamins and minerals.  So to get a more well-rounded diet, you eat more colors.

I love this idea, but adding in the thought of planning the color of my food on top of the health value, ease of preparation, and other factors proved to be a bit overwhelming.  So I came up with an easy solution - kill the whole flock of freakin' rainbow birds with one stone.

Mushrooms, yellow pepper, spinach, red onion, tomato sauce.


A pizza stone, that is.  Rainbow pizza.

Hit the produce section.

Remember the rainbow acronym - Roy G. Biv - Red, Orange, Yellow, Green, Blue, Indigo, Violet.

Create a vegetable rainbow in your cart.

Get your other supplies.  Crust (I like to use flat bread), tomato sauce (hello, Red!), cheese (cheddar does not count as orange).

Make it and bake it.

Taste the rainbow.

(And if you hate eggplant and can't think of anything else purple/blue to put on your pizza, get some blueberries and have them for dessert.)

Eat well.

  2. This was a GREAT post! I remember Rainbow Brite and the pizza is incredible! This is also terrific advice - I like to have brightly colored foods, but sometimes it's easy to overlook! Thanks!

  3. I love Rainbow Brite! Do you remember JEM? I totally thought I was her (my initials being JEM didn't help!). This pizza looks super yummy! Now if I could just get the picky husband to eat mushrooms (instead of sausage) on his pizza.....

  4. I love rainbows too! Recently my mom and I saw a triple rainbow. The third one was faint but it was there. *Happiness* That pizza looks amazing!

  5. Oh, YUM! I was having a little menu-planning slump for a while. I'd look at the plate and everything on it would be the same color (Chicken breast, mashed potatoes and cauliflower), or the same shape....geez was it boring. I'm out of the funk now, though. The pizza looks INSPIRING. :D

  12. Ah, Rainbow Brite! Forgot all about her. I love this pizza idea. My husband is so picky, he'll only eat pepperoni on his pizza (what is he, a grown five year old?), but I still splurge and make myself things like this on occasion. Thanks for sharing.

I was actually planning to write a post about it myself at some point, so I got a little giddy when I clicked over here from Yeah Write and saw that you had. :) And I do love a veggie-packed pizza... and my pizza stone.   14. That is great. When I give nutrition talks at my daughter's elementary school, they love when I talk about eating a rainbow, although I have to be VERY clear I'm not talking about Skittles. Maybe I can talk about Rainbow Brite, too. I'll now be sure to include that cheese does not count as orange.
