Marshmallow Bacon Sweet Potato Fries

Yup.  That's bacon and marshmallow on the same plate.  And the sweet potatoes make it healthy.



This happened in my kitchen.  On a weeknight.  That's how easy it was.

We got a big bag of sweet potatoes in our CSA share this week, and then I saw this picture, and it was like one of those movie sequences was happening in my head - you know, the scene where the character puts two and two together and has some sort of Epiphany.

Except my Epiphany involved bacon.

Sweet potatoes:

Cut into ¼-inch strips, toss in olive oil and salt, spread over foiled baking sheet, sprinkle with cinnamon and a pinch of cayenne, bake at 450 for about 25 minutes.

Mini marshmallows:

Set over a double boiler till they're mostly melted, add a little cream, mix until smooth.

Bacon:

Cook it.

Eh, voilĂ .

It's seriously that simple, and so easy to tweak based on your personal preferences.  Want to fry your sweet potatoes?  Go for it.  Want to add bourbon to your marshmallow sauce?  Let loose.

Other than the fact that this meal has an identity crisis - "Am I dessert?  Am I an appetizer?  Dear God, am I a side dish?!" - it's a great way to have fun with your food, especially this time of year, when cinnamon is pretty much required in all cooking.

This stuff is like Thanksgiving meets bar food meets bacon.

Lots of variations of this flavor combination are out there, and it's no wonder - it's a creative way to play with sweet, salty, and spicy.  Plus, it's hard to beat the flashback to childhood that accompanies messing around with melty, gooey marshmallow.

Another great use of these flavors can be found at How Sweet It Is, one of my favorite blogs.  Her Bourbon Marshmallow Bacon S'mores look positively sinful.  They also look like they'd take about a week to clean up, but I'm pretty sure it'd be worth it.
