I was so flattered when Clean Eating Magazine contacted me asking to use one of my many Facebook comments in their publication. I also indulged in a little shameless self-promotion of my blog in my response to them, but so far I haven't received The Phone Call That Changes It All. My fingers are still crossed, though...
I've tried several of the delicious recipes featured in my coming-out issue, including the Mediterranean Turkey Burgers. Last night, I wanted something homey; I made some soup (yes, even in this heat) and grabbed my magazine to get their recipe on clean biscuits. The biscuit recipe that got the full-page feature was strawberry shortcake with lavender biscuits and whipped ricotta, but to the side the editors listed several biscuit variations. I chose the cheese and herb biscuits, which contained goat cheese and thyme. Yum!
A note about "clean" biscuits vs. "regular" biscuits: Whole wheat flour in place of some of the white. Safflower oil instead of butter. Egg white only (the poor yolk) instead of a full egg for the egg wash. Sucanat instead of white sugar. And for the love of Pete, no shortening!

These are definitely not your typical biscuits, but they don't claim to be. Going in with that knowledge will help you out a lot when you give these a try. I think that for everyday cooking like this, clean is the way to go. Save the fatty white biscuits for a special occasion.
