Fun.fetti Cupcakes

I have been on Spring Break for exactly 44 hours.

And I am on fire.

There's nothing like a break from work to renew, refresh, and reinvigorate you.

And boy, did I need it.

Last week at school, two of my students came up to me separately to tell me that I looked tired.  One of them said, "Don't worry, you'll be able to get plenty of sleep on Spring Break."

So this week, after seven months of catering to twenty young children, I am choosing to indulge my own inner child.  And that means Downton Abbey marathons.  And pasta.  And sleep.  And blasting my new favorite song, all about being young and on fire, which happens to be sung by a band called Fun.  Yes, with a period at the end of their name:



Oh yes, and Spring Break means cupcakes.

Lots of cupcakes.

I (quite literally) heart cupcakes.


When I was called upon to provide dessert at this year's Easter festivities, I remembered a recipe I had seen on one of my favorite blogs, How Sweet It Is: homemade Funfetti cupcakes.

Let the Spring-kling begin.


I felt almost giddy buying these unnaturally-colored pellets of pleasure.  I mean, really:

How often does a grown woman buy sprinkles?

Answer:  Not nearly as often as she should.

How much fun is it to watch said sprinkles start to dissolve and blend in a rainbow of childlike, happy colors?

Answer: Super fun.


And just how good are these cupcakes?

Answer:  Good enough that I feel like ditching the Easter dinner, packing up my cupcakes and a gallon of milk, and heading for the border.

Crispy, buttery outside, soft, creamy inside.  Sweet vanilla-packed frosting.

All topped, of course, with more sprinkles.


Embrace your inner child.
